Roast Possum

Roast Possum

1 possum 
4 bay leaves
2 cups boiling water 
salt and pepper
6 yams
powdered sage
juice of one lemon
butter

Skin and clean the possum,  being sure to remove musk glands from small of back and beneath front legs.  Rinse well.  Rub inside and out with seasonings and lemon juice.  Place in a roasting pan on top of bay leaves and pour boiling water over it.  Cover and bake at 350 for 45 minutes.  Turn meat,  peel and cut yams.  Add yams and continue cooking for 45 minutes,  or until tender.
